According to nationaldaycalendar.com, "Tortellini is a signature dish from the Italian region of Bologna, where they claim to have created this stuffed pasta packed with flavor. Ravioli, tortellini, and tortellacci are all part of the same family of stuffed pasta. The most common fillings for tortellini are ham, white meat, and Parmesan cheese."
FUN FACT: "Members of an organization called The Learned Order of the Tortellini in the city of Bologna wear special hats to their meetings that are red and gold and shaped like tortellini. They also wear a ribbon, around their neck that has a gold tortellini hanging on it. The Learned Order of the Tortellini has a large membership dedicated to the preservation of the traditional tortellini."

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
1-1½ lbs. (450-700 g) cheese or any flavor tortellini
¼ cup (60 mL) reserved pasta water
½ stick (¼ cup/60 mL) butter, sliced
2 tbsp (30 mL) Savory Maple Spice Blend
5 cups (1.2 L) fresh baby spinach
2 tbsp (30 mL) shaved Parmesan cheese
½ tbsp (7 mL) balsamic vinegar
Squeeze of fresh lemon juice (optional)
𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀
Cook the tortellini in a large pot according to the package directions until just done. Reserve ¼ cup (60 mL) of the pasta water.
Brown the butter in the 12” Brilliance Nonstick Weeknight Skillet over medium heat, stirring occasionally until it browns, around 5-7 minutes. (It will smelly nutty).
Add the Savory Maple Spice Blend and stir well.
Transfer the tortellini and reserved pasta water into the skillet and add the spinach. Toss over medium-low heat until the spinach has wilted.
Add the Parmesan, vinegar, and lemon juice, if you’d like, right before serving.

Check the tortellini on the shorter side of the cooking time. Since you’re tossing it with the brown butter sauce, it will continue to cook a little bit more.
The acidity from the vinegar (and lemon juice) helps to balance the richness of the butter.
