It's National Coffee Cake Day❗

Today gives us a reason to sit and sip our coffee just a little bit longer. Today is National Coffee Cake Day!


According to nationaldaycalendar.com, "coffee cake is a cake intended to be eaten while enjoying a cup of coffee, maybe for breakfast or during a coffee break. They're an excellent excuse for a visit and a conversation starter.


The coffee cake itself does not contain any coffee. They are usually single-layer cakes made in square, rectangle or ring-shaped pans. Coffee cakes are often flavored with cinnamon or other spices, seeds, nuts and fruits, such as blueberries or apples. Typically they have a crumb topping or a glaze drizzle."

This classic coffee cake looks impressive, and it’s easy to throw together using ingredients you have in the pantry.


𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:

Cake

¾ cup (175 mL) butter, softened (1½ sticks)

1½ cups (375 mL) sugar

1 tsp (5 mL) salt

1 tbsp (15 mL) baking powder

2 tsp (10 mL) vanilla extract

3   eggs

¾ cup (175 mL) sour cream

1¼ cups (300 mL) milk

3¾ cups (925 mL) flour


Filling & Topping

1 cup (250 mL) granulated sugar

1 cup (250 mL) brown sugar

½ tsp (2 mL) salt

¼ cup (60 mL) cinnamon

¼ cup (60 mL) butter, melted (½ stick)

½ cup (125 mL) flour


𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀


  1. Preheat the oven to 350°F (180°C) and adjust the oven rack to accommodate the Tube Cake Pan, if needed.

  2. Add the butter and sugar to the Deluxe Stand Mixer. Select CREAM for 2 minutes and 50 seconds.

  3. Add the remaining cake ingredients and MIX for 2 minutes and 30 seconds. Pour half of the batter into the ungreased Tube Cake Pan.

  4. For the filling, combine both of the sugars, salt, and cinnamon. Sprinkle 1½ cups (375 mL) of the cinnamon-sugar mixture over the cake batter, then cover with the remaining batter. Use the release tool to swirl the batter and filling together.

  5. Add the melted butter and flour to the remaining cinnamon-sugar mixture. Mix until crumbly. Sprinkle over the cake and bake for 1 hour, or until a toothpick comes out clean.

  6. Cool for at least 20 minutes before removing from the pan with the release tool.
