In keeping with the idea of eating seasonally, apples are perfect for fall. From warm apple pie to apple cider, there are so many ways to incorporate apples into your fall meals.
Here’s a great way to start your day with this healthy
Apple Cinnamon Baked Oatmeal:
Ingredients
1 1/2 cups quick-cooking oats
1/4 cup almond meal
1 tsp baking powder
1/2 tsp sea salt
1 1/2 tsp ground cinnamon
pinch ground nutmeg
pinch ground cloves
1 cup unsweetened applesauce
1 large egg lightly beaten
1/4 cup maple syrup or honey
1 cup unsweetened vanilla almond milk
1 tsp pure vanilla extract
I large apple finely chopped (about 1 1/2 cups)
Instructions
Preheat oven to 350 degrees then grease a 9x9” baking pan.
Add chopped apples to a small, microwave-safe bowl. Microwave for 2 minutes. Set aside to cool.
In a small bowl mix together oats, almond meal, baking powder, salt, cinnamon, cloves, and nutmeg, set aside-In a large bowl, beat eggs, add applesauce and mix until combined.
Next, add almond milk, vanilla, and maple syrup. Stir until combined.-Add dry ingredients to the wet mixture and stir until combined.-Before going in the oven, mix in the cooked apples.
Bake for 35-45 minutes or until the top is set and edges are slightly brown.
